A Stitch Dictionary
You really can't have too many stitch dictionaries as a knitter. Each one is unique and offers an array of new ideas for knitting projects. Double-check your knitters' library to ensure you get them something new for their collection.
My personal favourite is The Knitting All Around Stitch Dictionary by Wendy Bernard.

A pattern book from their favourite fandom!
These days, a lot of designers are turning to their favourite books and movies for design inspiration. If your knitter loves it, chances are there is a project book out there for them! Here are a couple of examples, but you can easily search Amazon or Google for [movie name] + knitting to find the perfect book.

A cheeky mug
You can never have too many mugs, and since most knitters like a cup of tea or coffee while they stitch, why not get them a new knitting themed mug. Here are a couple of cheeky options.

A punny project bag
If mugs aren't their cup of tea, you can't go wrong with a project bag. . I particularly enjoy the punny bags by Pine and Purl, such as this aptly themed bag for 2020. You can contact them directly to order or visit one of their local stockists to purchase.
There are many project bag makers out there, and your local yarn shop may carry some (see below). Or you can search for a knitting project bag on Etsy or Instagram to find a project bag maker local to you!
A project kit
You can pick up everything your favourite knitter or crocheter needs to DIY their very own winter accessories - including the yarn, needles and pattern - in an all-in-one project kit like this hat or scarf from Wool & the Gang (via Chapters-Indigo). This is especially a great gift for someone new to knitting or someone wanting to learn for the first time as the projects are simple and easy to follow.
A yarn subscription box
There are subscription boxes for everything and anything these days. Yarn and fibre arts are no exception. Depending on your budget (and how much you love the person you're shopping for), a subscription box can be a one time purchase or the gift that keeps on giving all year long.

There are options for knitters, crocheters, socks and larger projects. The first two on my list above are Canadian, whereas the third is US-based but ships worldwide.
A Gift Certificate
Head on over to your local yarn shop (chances are your knitter has their favourite) and pick up a gift certificate. That way, your gift not only helps support a small business in your community, but it allows the receiver to pick out something for themselves with little to no stress for you.
If you're not sure, a simple Google search should help you. Search your city name and local yarn shop, and you should find something.
